This recipe was the Third Place Winner in the 1971 National Hard Crab Derby in Crisfield, MD.
- 1 pound claw crab meat
- ¼ cup onion, chopped
- ¾ cup mayonnaise
- 2 tablespoons green pepper, chopped
- 1 tablespoon horseradish
- ¼ teaspoon salt
- favorite egg salad
- day-old unsliced loaf of bread
Mix crab meat, onion, mayonnaise, green pepper, horseradish, and salt. Add more mayonnaise if spread isn't loose enough but don't make too loose.
Cut bread horizontally in 4 slices. Spread first slice with crab mixture, top with next slice of bread, spread with egg salad, top with last slice of bread and wrap in foil. Chill until ready to serve. Slice thinly and garnish as desired.
Serves about 10.
