Softshell Crabs Lindo
  • 6 hotel softshell crabs
  • 2 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • oil
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne
Soak the crabs for 30 minutes in the milk to which you have added the salt and pepper. Rub the milk carefully into the crabs. Mix the flour, salt, pepper and cayenne. Thoroughly coat the crabs and fry in hot fat until golden brown. Serves 6.
Serve hot with your favorite sauce such as tartar or a nice, hot sauce. Pour yourself a pint of Wild Goose Beer, ah!
