Maryland Crab Meltaways

Maryland crabmeat mixed with cheese, butter and seasonings, and then spread on an English muffin to bake until golden perfection is the ideal appetizer. It’s just plain delicious, plus these little delights can be assembled ahead of time and cooked moments before your guests arrive.

I’ve heard this delectable dish called many different things. In Annapolis, Ms. Pickett calls it Crabbies and uses Cheese Whiz, while in Crisfield, Ms. Scott calls it Crab Meltaways and uses Cheddar. Either way, either cheese, either name, they are delectable!

  • Place a rack 6 inches away from the broiler and turn it on.
  • In a bowl, combine the butter, cheese, mayonnaise, garlic, salt, and crabmeat, Mix well.
  • Equally divide the spread among the 12 muffin halves.
  • Broil until bubbly and golden brown, or about 4 minutes.
  • Serve immediately.
  • 1 stick unsalted butter
  • 8 ounces Cheese Whiz or shredded Cheddar cheese
  • 1½ teaspoons mayonnaise
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • 1 pound crabmeat, picked over for shells and cartilage
  • 6 English muffins, split
