Cookie's Crab Imperial
  • 4 tablespoons chopped green pepper
  • 2 tablespoons chopped onion
  • 4 tablespoons mayonnaise
  • 1 pound backfin crab meat
  • 2 tablespoons butter
  • 2 tablespoons pimiento
  • 2 eggs, beaten
  • 2 teaspoons dry mustard
  • 1/2 pound steamed shelled shrimp
Heat butter. Add green pepper, onion and pimiento. Saute until tender. Combine eggs, dry mustard, mayonnaise and crab meat. Add sauteed vegetables and mix. Layer the bottom of baking dish with shrimp. Spoon crab mixture over the shrimp and bake at 350 degrees for about 15 minutes or until a very light brown on top. Serves 6.
