Matt's Fried Softshell Crabs
  • 12 cleaned hotel softshell crabs
  • salt and pepper
  • flour
  • butter for frying
Dry crabs with paper towel. Sprinkle with salt and pepper. Lightly coat with flour. Cook crabs in fry pan, in just enough fat to prevent sticking, until browned; about 5 minutes on each side. Makes 6 servings.
If desired, crabs may be deep fried at 375 degrees for 2 to 3 minutes or until browned.
