Tom's Fried Clams
  • 15 large clams, shucked
  • 1 egg, beaten
  • 1/4 teaspoon baking powder
  • 1/2 cup (more or less) Jiffy mix
  • 1/4 cup (more or less) evaporated milk
  • salt and pepper
Drain shucked clams and wash. Cut up clams, using scissors. Mix together rest of ingredients, making batter. Add more Jiffy mix or evaporated milk if needed to make batter consistency of cake batter. Stir in chopped clams. Drop clams and batter by tablespoonful into hot oil. Fry until golden brown on each side.
