New Bay Crab Cakes w/Ginger Lime Sauce
  • 2/3 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/4 teaspoon cayenne pepper
  • 1 pound jumbo lump crab meat
  • 1 cup dry breadcrumbs, divided
  • 1 jar (2 ounces) chopped pimiento, drained
  • 2 tablespoons minced green onions
  • 1 teaspoon chopped cilantro
  • 2 tablespoons butter
  • Ginger Lime Sauce (recipe below)
Mix mayonnaise, lime juice and red pepper. Add crab meat, 1/2 cup of breadcrumbs, pimientos and green onions. Form into 8 patties and coat in remaining breadcrumbs. Cook patties in butter in a large nonstick skillet over medium heat 3 minutes per side or until browned and heated through. Serve immediately with Ginger Lime Sauce (recipe below). Serves 4. Ginger Lime Sauce includes 1/2 cup mayonnaise, 1/4 cup sour cream, 1 tablespoon lime juice, 2 teaspoons grated lime peel, 1/2 teaspoon ground ginger. Mix all ingredients. Serve with New Bay Crab Cakes. Makes 3/4 cup.
For a cooling patio lunch, serve New Bay Crab Cakes topped with a cool ginger lime sauce. Hot twist rolls, made from a mix, are a tasty accompaniment. For dessert, offer strawberry ice cream and refreshing ice tea garnished with fresh mint. Need more?
