A Jimmy Treat

    Ingredients:
  • 1 pound lump crab meat
  • 1 cup milk
  • 5 drops Tabasco
  • 1/2 teaspoon parsley flakes
  • salt and pepper to taste
  • 30 Ritz crackers (crushed)
  • 1 tablespoon flour
  • 1 teaspoon mustard
  • 2 slices bread
  • 1/4 teaspoon crushed red pepper
  • oil for frying

Preparation Instructions:

White sauce: in saucepan, mix together flour and milk. Cook over medium heat until thickened; let cool. Add Tabasco sauce and mustard. Pick over crab meat; add bread crumbs, parsley flakes, salt, pepper and crushed red pepper. Add cooled sauce; mix thoroughly. Shape into cakes. Roll in cracker crumbs and fry until brown.
