A Jimmy Treat
Ingredients:
- 1 pound lump crab meat
- 1 cup milk
- 5 drops Tabasco
- 1/2 teaspoon parsley flakes
- salt and pepper to taste
- 30 Ritz crackers (crushed)
- 1 tablespoon flour
- 1 teaspoon mustard
- 2 slices bread
- 1/4 teaspoon crushed red pepper
- oil for frying
Preparation Instructions:
White sauce: in saucepan, mix together flour and milk. Cook over medium heat until thickened; let cool. Add Tabasco sauce and mustard.
Pick over crab meat; add bread crumbs, parsley flakes, salt, pepper and crushed red pepper. Add cooled sauce; mix thoroughly. Shape into cakes. Roll in cracker crumbs and fry until brown.
