Dean's Cakes

    Ingredients:
  • 1 pound jumbo lump crab meat
  • 1 tablespoon minced green pepper
  • red pepper to taste
  • black pepper to taste
  • mayonnaise
  • butter for frying

Preparation Instructions:

To the crab meat, add peppers and combine with enough mayonnaise to bind the crab meat into cakes. Fry until golden. Serves 4.

» Crab meat is one of summer's most delightful culinary specialties. It can be prepared quickly, served hot or cold, and is ideal for the weight-watching mood of the sun-bathing months. This recipe is simple to prepare and is intended to feed four people. Dean says he got the recipe from a cab driver and so he passed it on to us. Thanks, Dean!
